Farms certified by the government are crushing organic sugar cane with large machinery. This process involves extracting sugar cane milk from sugar cane, which is boiled in large containers.
This sugar cane milk is removed from the boiling container after it has reached a certain thickness known as “Paagu” in Tamil.
It is cooled and then solidified and crushed into a powder known as a Sakkarai. The yellow to dark brown Jaggery is a traditional dessert of India which is softer than refined sugar.
The Jaggery is made by evaporating the raw sugar cane extract from the crystals. It is called “Panela” in Mexico & South America and “Kur” in India.
